My Favorite Lunch: Mediterranean Couscous Salad

How It All Started
I first made this salad during one of those spontaneous summer grill nights.

• Fresh herbs (mint, parsley, or basil)
• Olive oil
• Lemon juice
• Salt and pepper
Sometimes I add extras: grilled zucchini, roasted peppers, or chickpeas for more protein.
To make it:
1. Pour boiling water over the couscous, cover it, and let it sit for a few minutes.
2. Fluff it up with a fork.
3. Mix in all the chopped vegetables, herbs, and feta.
4. Add olive oil, lemon juice, salt, and pepper to taste.
And that’s it. Ten minutes, no stress, no stove -just freshness in a bowl.
A Lunch That Travels Well
One of my favorite things about this salad is how easy it is to take anywhere.
I’ve packed it in containers for long train rides, brought it to lakeside picnics, or eaten it quickly between university lectures. It never disappoints.

It’s quick enough to make in a student kitchen, cheap enough for any budget, and elegant enough for a dinner party. It adapts to whatever you have no cucumbers? Add carrots. No feta? Use another cheese. It never fails. Maybe that’s why it’s become my best lunch. It’s reliable, comforting, and always ready to save the day.

Sometimes, when I eat it alone now maybe during a busy week I can still hear the laughter from those summer grill nights. The way we passed the bowl around, everyone taking “just a little more.”
The warmth of the evening air, the sound of someone strumming a guitar, the faint smell of grilled food. It’s funny how food can hold memories so clearly. One bite, and you’re back there — smiling, barefoot, happy, with no sense of time.
